Low/No Sodium Scrabble Turkey Hash Recipe Ingredients: 24 oz (about 12 redskins) Diced Potatoes Potassium, Vitamin B6 2 ea. Medium size White Onion -- (About one pound peeled and julienned) 4 oz. Roasted Red Pepper Vitamin C, Potassium ½ cup Grape seed Oil Vitamin A, Polyunsaturated Fat 8 oz. Egg Beaters (can use Egg Whites) 4 oz. (Cut into batons) Salt free Cooked Michigan Turkey Breast 1 teaspoon Fresh Ground Black Pepper Method: 1. Dice Potatoes and poach in boiling water for 15 minuets. While the potatoes are cooking add all the oil and the julienne onions into a very large sauté pan and start to brown over medium high heat. 2. After the potatoes are cooked thoroughly drain all poaching liquid and add to sauté pan, cook until slightly brown (about 5 minuets). 3. Add roasted red peppers, Turkey and Black Pepper to pan and cook another one minute to heat. 4. Evenly divide onto 4 single serving plates and make a "well" in the center of each plate for the egg beaters, Reserve all leftover oil in the warm sauté pan. 5. Add Egg beaters or, (egg whites if using) to hot sauté pan and cook to desired hardness and divide into 4 servings. Ee Hooi walked into hospital accompanied by his brother and eldest aunt on 23 December 2003 late evening. They walked about 3 miles from home to the hospital as the bus was slow in coming. On admission the hospital took blood for electrolytes and subsequently gave him a drip with sodium added. A day after the drip with sodium added, he screamed when the brain suffered the effects of sodium going in too fast. The ward staffs tied him to his bed and pushed him into a store cupboard, so the screams did not disturb the other patients. On 24 December 2003, he was in a coma. He woke up on 24 January 2004 a vegetable. Let me explain why Ee Hooi went into hospital. He had fever, cold for several weeks and slightly confused. He drank a lot of water which he thought would help with his fever. That must have contributed to his low sodium (hyponatremia). The hospital had given too much sodium too fast via a drip, and that caused his brain damage called extra pontine myelinolysis. His blood electrolytes result showed sodium on admission was 103, and a day after the drip containing sodium was administered, the blood electrolytes showed 127. He was given 24 mmol of sodium in one day when the norm is 10 mmol per day. It was clear the sodium drip went in too fast from the blood electrolytes taken before and one day after. When sodium is delivered too fast, the myelin sheath was destroyed. The destruction of the myelin sheath that covers the nerve cells prevent the signals from being <b>...</b>

Sodium is needed by the body so you know, a lot of people need to go on a salt-free diet or a low salt diet if they have high blood pressure, but for most of us, the ones that have normal blood pressure, we do not need to go on a really low salt diet. Salt is needed for muscle contraction and nerve transmissions and maintaining your PH balance and hydration, so not enough salt is actually just as much a problem as too much salt. Most adults need about 2300 milligrams of sodium a day. That is the top of the limit. That is about one teaspoon, so when you look at the salt that you are eating that you actually put on food or put in food while you are cooking it, you are probably over that limit. And if you eat any products that are packaged products, whether you eat chips or even just canned soup, you are going to be eating a lot of salt. So one thing I do recommend is if you are buying anything in a package or can, read the sodium content on the nutrition label. You are going to see that everything, every processed food is loaded with salt and the best thing you can do is try not to salt your food, and that way your taste buds will develop less of a need for salt and you would not need as much. Some of the ways that you can reduce your sodium intake besides not salting your food is to cook your own food.
